Sourdough queen

If it wasn’t for this “Kung Flu” pandemic, Bacolod would never have been so obsessed with sourdough bread.

Having lived more than half of my life in Paris, I never even knew I was being fed with sourdough bread everyday in the French capital. Not until I spent some time in San Francisco, California in the US of A did I really become an aficionado of this special bread. I loved it, not only because of its distinct sour taste but the slightly gooey texture that made eating it so delectable.

One day, browsing through entrepreneurial wiz Mitzy Gamboa Tongoy’s Facebook Bacolod Q-sina Eats, I discovered this Board Exam topper (2017) in Interior Design named Paulyne Genson, who excels in only making sourdough products in Bacolod. Being a diehard foodie, when she flew home last March to the City of Smiles in time for the quarantine, the young mademoiselle started cooking. Every food craving she had would be a task to make it herself, and because of the amount of time on hand, she figured cooking everything from scratch would be a good hobby.

Starting with DIY burger buns, tortilla wraps, and sandwich loaves until one day when she stumbled upon this sourdough video that piqued her curiosity upon learning how meticulous and time consuming it was to make. Paulyne grew her own starter last April and she’s been sourdough obsessed since.

Our sourdough queen currently makes only bread and pizza, but working already on expanding to other breads and pastries using exclusively sourdough as her leavening agent. When I first saw her name, I thought she was married to a Danish with Genson being typically Scandinavian. Well, our self-made baker carries her family name from her father, who’s from Cebu while her mom is from Manila. Although born and raised in Bacolod, she moved to Manila for college and was already in the midst of a business course hoping to start a modular cabinetry business in Bacolod when Covid struck. Besides being wrapped up in sourdough, Paulyne enjoys photography, reading, and writing.

Culture vultures would be interested to know that our world famous piano concert artist, Leonor Kilayko, will be playing in an entire “Soiree Chopin” on October 22 at 5:30 in the afternoon at the Kilayko-Sian residence in Talisay City, followed by dinner.
